For the green layer take a pan and boil spinach leaves with the desired amount of water. Add 1/3 part of cooked rice into the spinach and coat well so that the rice gets mixed into the green colour. Chop the onions and add it to a vessel along with 1 tablespoon of ghee and heat it over medium flame. Saute for a while, add spinach rice, mashed peas, green chillies and desired amount of salt. Mix the ingredients properly.
For the orange layer, heat the leftover ghee in a vessel and fry 1/2 teaspoon cumin. Now, add the saffron with the required amount of water. Once the water gets a pale yellowish colour, add another 1/3rd part of cooked rice into the saffron. Add the curry powder and salt then mix well to coat the colour all over the rice. Cover and simmer for a few minutes.
Grease a baking dish and spread half the cooked rice. Next spread the spinach rice mixture and cover with the remaining saffron rice . Serve hot with chilled raita or curry and enjoy!
